Portuguese Egg Tart

After try the macau Portuguese Egg Tart, immediately i fell in love with this small little sweet dessert.
Frankly speaking, i love to eat Portuguese Egg Tart rather than normal Egg Tart.. Maybe i like it due to sweetness custard taste..


For Puff Pastry :
(A)
200 gm flour
25 gm butter
1/8 tsp salt
110 gm water

(B) 
150 gm Pastry Margarine

Filling :
200 gm dairy whipping Cream
399 gm milk
70 gm sugar
3 eggs
3 egg yolks
1/2 tsp vanilla essence

Method : 
To make Puff Pastry :
Mix ingredients (A) to form a smooth dough, let it rest for 15minutes.
Roll the dough into square, and wrap up pastry margarine with.
Then roll into rectangular, fold into 3 layer once and 4 layer twice.
In between the folding method, you can rest the dough, if you find it hard to roll with.

To make filling :
Cook whipping cream and milk until 70C.
Stir in sugar and cook until the sugar dissolves.
Add it into the beaten egg and egg yolks.
Mix until well blended.
Lastly add in vanilla essence and set aside to cool.

Press the dough into tart moulds or directly press it into the tart mould.
Pour the filling into the pastry tart about 80% full.
Bake at 220C for 20-25minutes and is ready to serve.

Enjoy baking...

I was amazed that 1st time bake this is can be say well done, but is just a little bit salty. I think i add more already. Next time i will put lesser. Other than that everything is good. The tart is crispy with layer of Margarine pastry inside.. Yummy..

Chocolate Wassant Bread

Hi there... I have been taking a very very long holiday.. And now i'm back to action for my kitchen..
So there once i saw this recipe, and i look through it and thinking this is a MUST try recipe since the ingredients is easy to get prepared.. And also this was my 1st time of baking Chocolate Wassant Bread...
I get the recipe from My Little Space.. and thanks to her for providing an excellent recipe..


So the first step is to get prepare the Starter Dough first because this takes about hour and more. So when you done this one, you can do other things first while awaiting this dough to get proof....

Starter Dough :
225gm   all purpose flour
1 tspn    yeast
100ml    water
(combine all ingredients to form a soft dough and let to rest for an hour or till double in size)

Main Dough :
225gm  all purpose flour
100gm  sugar
1 egg
60ml   water
70gm  butter
1 tspn  salt


*500gm   homemade chocolate paste, flatten into 6" square
(will try to post a homemade ones)

Method :
1. Once the Starter Dough is ready, tear into pieces and add into main ingredients

2. Combine all ingredients and mix to form a soft dough then let to rest for an hour or till double in size.
3. Place dough to a slightly floured working table and knead till smooth, the dough should be very soft, so must handle with care.
4. Then roll out flat slightly bigger than the chocolate paste.
5. Place in chocolate paste and wrap dough over the paste till totally sealed.
6. Again roll wrapped dough into 9x13" size and fold into 3 and roll flat again, like making a pastry dough.
7. Repeat one more time and finally roll into 12x16", then cut into triangle shape (size as desired).
8. Roll each up like a swiss roll then place them to baking tray, again let to rest for 30-40 mins.
9. Brush on egg glaze then bake at preheated oven 180-185'C for about 20 mins or till brown.


 After combining all the Starter Dough ingredients.

Normally i will cover it with a wet cloth to stay moisture for the dough.

There goes the Starter Dough after proof for bout 1 hour plus...


This is the chocolate paste homemade, then put in fridge. FYI, i'm using the baking paper on the bottom chocolate, i should have use plastic paper so that it is more easy to remove..

And then comes the most important part which is combining the dough with the chocolate paste which is quite uneasy (for me). It is quite messy step.... End up my chocolate filling is on the top of the bread after i roll it....




 After i roll the dough, i let it rest for bout 40minutes before set to bake.

And there goes the finale of the bread...yeah... Although the outlook of this bread is not very nice and quite big, but the bread is very soft and chewy inside... And i am happy for the result  that is sucess...Hooray.....


 Immediately i place the bread to another tray to cool down...
